When the weather gets colder, simple roasted tomato soup is so comforting. It's vibrant and bright, brightening up gloomy days, and also very comfortable, keeping you warm. This roasted tomato soup is easy to make. The various tomatoes are first roasted in the oven together with other aromatics, then they are simply mixed. It does take some time in the oven, but there's so little “doing” that you don't even need to turn on the stove. As long as you leave it in the oven for enough time, the roasting will give it a rich flavor, turning simple tomatoes into a more flavorful dish.
What to Serve with Roasted Tomato Soup
Cheesy toast/grilled cheese sandwiches go best with roasted tomato soup. It's a classic for a reason. The roasted tomato soup balances the richness of the cheese, creating a harmonious and cozy feel. There's nothing better than dipping a cheese sandwich into soup. Alternatively, crusty bread would be good, or some croutons on top.

How to Make Roasted Tomato Soup with Fresh Tomatoes
Roasted Tomato Soup Ingredients
- fresh tomatoes – I like to use a mix of vine tomatoes, plum tomatoes and cherry tomatoes
- chili
- white onion
- garlic – the whole light bulb
- Salt, black pepper, paprika
- fresh basil
- olive oil
- double cream
- chili flakes (optional) – service
Recipe Notes
- For this recipe you will need a Large baking pan Suitable for all tomatoes and vegetables as well large mixer.
- For the best flavor, I recommend trying different types of fresh tomatoes. I usually go for a mix of vine, plum, and cherry tomatoes. Vine tomatoes tend to be juicy, while plum tomatoes are fleshier and have a stronger flavor, while cherry tomatoes bring sweetness to the mix. But don’t stress if you can’t buy all the tomatoes—any fresh tomatoes will do.
- When it comes to baking, take your time. You get the best flavor results when the tomatoes are caramelized and charred. My oven took about 45 minutes. Every oven is different, so I recommend checking the 40 minute mark. I wrote 40-50 minutes as a general time frame in the full recipe below.

- 1 kilogram Fresh tomatoes (I used a mixture of vine tomatoes, plum tomatoes, and cherry tomatoes) Halve/Quarter
- 1 chili roughly chopped
- 1 white onion roughly chopped
- 1 light bulb garlic Cut in half, skin on
- one handful fresh basil
- 1 teaspoon Salt
- 1 teaspoon black pepper
- 1 teaspoon chili
- one drizzle olive oil
- 1 cup chicken soup
- 1/4 cup double cream
- Chili flakes (optional) Serve

Preheat the oven to 200°C.

Place chopped fresh tomatoes, red peppers, white onions and garlic on a baking sheet.
1kg fresh tomatoes (I used a mixture of vine, plum and cherry tomatoes), 1 red pepper, 1 white onion, 1 garlic

Season with salt, black pepper and paprika. Drizzle with olive oil. Stir to combine.

Bake in oven for 40-50 minutes until charred.

Squeeze out the roasted garlic and discard the skins. Add all the roasted tomatoes and vegetables to a blender.

Add chicken broth and stir until smooth.

Stir in the double cream. Taste and adjust seasoning if necessary.

Top immediately with fresh basil and chili flakes and serve.

- For best results, use different types of fresh tomatoes, such as a mix of vine, plum, and cherry tomatoes. Vine tomatoes tend to be juicy, while plum tomatoes are fleshier and have a stronger flavor, while cherry tomatoes add a sweetness. But if you can't get them, don't worry because any fresh tomatoes will still do the trick.
- Don't rush the baking process. You want the tomatoes to be well charred and caramelized for the best flavor. Every oven is different and some may take longer to bake. Generally speaking, it takes about 40-50 minutes.
