I turned my mom’s Christmas risotto (smoked salmon and whiskey) into air fryer rice balls. This works great (but honestly, it's never as good as fried).

Air fryer rice balls recipe:

- leftover risotto
- 150 gram cheese, Mozzarella or soft blue cheese, cut into small cubes
- 3 egg
- 200 gram flour
- 200 gram bread crumbs
- salt and pepper

Roll the risotto into a ball and make a hole in the center with your thumb.

Press in a piece of cheese and roll the ball again.

Make a production line: prepare a bowl of flour, a bowl of beaten eggs, and a bowl of bread crumbs.

Season eggs and flour with salt and pepper.

Dip the balls in flour, then in eggs, then in bread crumbs.

Set aside until there are a dozen (depending on the size of your air fryer).

While the first batch is cooking, you can continue making them.

Set air fryer to 190 degrees Celsius for 15 minutes.
