This easy Air Fryer Croissant and Butter Pudding with Mini Eggs is the perfect dessert for the Easter holiday!

  • 1 7×7-inch baking pan

for pudding

  • 3 big croissant Preferably 1-2 days
  • 2 egg
  • ½ cup double cream
  • ½ cup milk
  • 75 gram Mini eggs (1 pack)
  • 2 spoon demerara sugar
  • 1 teaspoon Vanilla extract

For the custard

  • 3 yolk
  • 1/4 cup white sugar
  • ½ teaspoon Vanilla extract
  • ½ cup milk
  • ½ cup double cream
  • 1 spoon corn starch
  • Cut the croissants into slices.

    3 large croissants

  • In a mixing bowl, whisk together eggs, milk, double cream, and vanilla extract.

    2 eggs, ½ cup double cream, ½ cup milk, 1 teaspoon vanilla extract

  • Butter the bottom and sides of a baking pan and sprinkle 1 tablespoon Demerara sugar on top.

    2 tablespoons demerara sugar

  • Place soaked croissant slices in baking dish and pour in remaining custard mixture.

  • Add the mini eggs, placing them between the croissant slices and some on top.

  • Sprinkle remaining demerara sugar on top.

  • Place in the air fryer at 180°C for 20 minutes until the custard is solidified and the top is golden brown.

Make vanilla custard for serving

  • While the croissant pudding is cooking in the air fryer, you can make the vanilla custard.

  • In a small saucepan, heat the milk, double cream and vanilla over medium heat until simmering, stirring regularly.

    ½ teaspoon vanilla extract, ½ cup milk, ½ cup double cream

  • Meanwhile, whisk the egg yolks and sugar in a mixing bowl until fluffy and light in color.

    3 egg yolks, ¼ cup white sugar

  • Spoon about 1/4 cup of the warm milk into the egg yolk mixture and stir until combined.

  • Slowly add remaining milk to egg yolk mixture.

  • Return mixture to pot and set over medium/medium-low heat. Add cornstarch and stir until custard thickens.

    1 tablespoon cornstarch

  • Serve warm with croissant butter pudding.
